The main objective of the project is to reduce food waste in the fish processing industry through the valorization of by-products. The project seeks to generate new innovative products from surplus fish, contributing to sustainability and the concept of zero waste.
To carry out this research, the project is made up of several companies in the fishing sector. On the one hand, the participating companies will be in charge of identifying and quantifying the surplus species that will be valued, with the aim of giving them a new commercial use instead of being wasted.
On the other hand, the adequacy of manufacturing and packaging technologies will also be addressed in order to develop fish-based products that are innovative and sustainable, without compromising their useful life. In addition, the implementation of a production process at the scale of a pilot plant will be carried out, which will allow the technical and economic viability of these new products to be validated.
